Food Manufacturing Humidification & HumidifiersThere are many different applications for humidifiers within the food manufacturing industry. Here are just a few of the many humidity control projects JS Humidifiers has undertaken for food manufacturers around the World:

Bread proving ovens – proving ovens need to be maintained at 75% relative humidity (%rH) to prevent the bread from drying on the surface during the proving process prior to baking. If it does dry then a crust will form that cracks as the bread expands. This damages the flavour and appearance of the product.

Biscuits – to produce a moist, light fluffy wafer, steam humidifiers are used to maintain the air at 75%rH to allow the wafer to expand without drying out.

Cheese stores - cool cheese stores need to be maintained at a high 95%rH to prevent the cheese from forming a crust and cracking during the maturing process.

Potato crisps – by maintaining the intervention potato store at 4°C and 95%rH with tight control over CO2 and light levels, the potatoes are kept fresh for up to nine months. The Intervention store is a reserve storage area that is called upon if the potato delivery from suppliers is interrupted. This ensures that the production of potato crisps is not interrupted and can carry on 24/7.

Smoked sausages – the smoking process needs to be maintained at 75-80%rH in order to prevent the sausage from drying out as it is hung over a long period of time.

Tea bags – humidity control is used to maintain the moisture content of the tea and ensure that every bag is the same weight from the point it's filled to when it is packed inside its carton. It's also used to control static so that the tea flows down the hoppers and into the bags uninterrupted.

Fruit ripening – exotic fruits such as bananas, mangos and pineapples need to be ripened in areas with 75-90%rH to prevent fruit from splitting during the ripening process.

In many of the above applications, humidifiers are used to prevent a product from losing moisture to its surrounding environment. This ensures the correct internal moisture content and quality is kept consistent, improving shelf life and appearance. However, the adiabatic cooling effect of spray humidifiers such as the JetSpray can also lower the temperature providing an additional benefit.
